Salmon and Mango Ceviche

Ingredients

  • Skinless salmon – 400 g
  • Mango – 2 medium fruits (or 2 cups diced)
  • Red onion – 1 small
  • Lemon – 2 units – for juice and zest
  • Olive oil – 2 tbsp
  • Salt + black pepper
  • Coriander leaves

Method

  1. Cut salmon and mango into 2cm cubes.
  2. Finely slice red onions into “half-moon” shape.
  3. Grate the peel of one lemon into zest and squeeze the juice from both lemons.
  4. Place all the ingredients in a bowl and mix well.
  5. Serve on top of mixed leaves and enjoy!
