Ingredients
- Skinless salmon – 400 g
- Mango – 2 medium fruits (or 2 cups diced)
- Red onion – 1 small
- Lemon – 2 units – for juice and zest
- Olive oil – 2 tbsp
- Salt + black pepper
- Coriander leaves
Method
- Cut salmon and mango into 2cm cubes.
- Finely slice red onions into “half-moon” shape.
- Grate the peel of one lemon into zest and squeeze the juice from both lemons.
- Place all the ingredients in a bowl and mix well.
- Serve on top of mixed leaves and enjoy!
