Strawberry Pudding

Strawberry pudding is a luscious and creamy dessert that perfectly captures the essence of fresh strawberries. This healthy homemade treat is not only easy to prepare but also offers a delightful balance of sweetness and fruitiness.

Ingredients

  • Low-fat Greek yogurt – 2 cups (500g)
  • Light Cream cheese – 1 tub (250g)
  • Stevia powder – 2/3 cup (120g)
  • Lemon – 1 fruit – zest and juice
  • Vanilla essence – 2 tsp
  • Unflavoured gelatine powder – 1 sachet (12g)
  • Water – 50ml
  • Strawberries – 2 cups

Method

  1. Mix yogurt, cream cheese, stevia powder, lemon zest and juice, and vanilla essence in a food processor or blender.
  2. In a small cup, mix the gelatine powder with 50ml of water and heat in the microwave for 20-30 seconds.
  3. Stir the warm gelatine into the blender mixture and beat for 1 minute.
  4. Place the mixture in a container and take it to the fridge for at least 2 hours (or until set).
  5. Heat one cup of strawberries in the microwave until they are soft, and then mash with a fork to form a rich sauce.
  6. Once solid, cover the pudding with the strawberry sauce and decorate with the fresh strawberries.
  7. Enjoy!
