Strawberry pudding is a luscious and creamy dessert that perfectly captures the essence of fresh strawberries. This healthy homemade treat is not only easy to prepare but also offers a delightful balance of sweetness and fruitiness.

Ingredients
- Low-fat Greek yogurt – 2 cups (500g)
- Light Cream cheese – 1 tub (250g)
- Stevia powder – 2/3 cup (120g)
- Lemon – 1 fruit – zest and juice
- Vanilla essence – 2 tsp
- Unflavoured gelatine powder – 1 sachet (12g)
- Water – 50ml
- Strawberries – 2 cups
Method
- Mix yogurt, cream cheese, stevia powder, lemon zest and juice, and vanilla essence in a food processor or blender.
- In a small cup, mix the gelatine powder with 50ml of water and heat in the microwave for 20-30 seconds.
- Stir the warm gelatine into the blender mixture and beat for 1 minute.
- Place the mixture in a container and take it to the fridge for at least 2 hours (or until set).
- Heat one cup of strawberries in the microwave until they are soft, and then mash with a fork to form a rich sauce.
- Once solid, cover the pudding with the strawberry sauce and decorate with the fresh strawberries.
